A slow morning

Woke up this morning semi-late, but not really, despite the late arrival early this morning. I made pumpkin waffles. Instead of using my usual pumpkin waffle recipe, I tried a new one. They turned out softer than the usual ones, and less pumpkiny.

2 c. flour
1 tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
5 tbsp. sugar
1 tsp. ground ginger
1 tsp. nutmeg
1 tsp. cinnamon
2 large eggs, separated (I used jumbo eggs, yolks into meium bowl, whites into mixer bowl)
1/4 c. vegetable oil (I used safflower oil)
2 c. buttermilk
3/4 c. canned pumpkin
1/4 tsp. cream of tartar

1. In a largish bowl, whisk together flour, baking powder, baking soda, salt, sugar, giner, nutmeg, and cinnamon.

2. In a medium bowl, whisk egg yolks until pale yellow (I just mixed them), whisk in oil, buttermilk and pumpkin.

3. Beat egg whites until foamy, add cream of tartar and beat until soft peaks form (I mixed until hard peaks formed).

4. Add yolk mixture to flour mixture, stirring to combine.

5. Gently fold egg whites into the batter.

6. Make waffles according to waffle iron directions.

The waffles turned out more puffy and softer than the Smitten Kitchen waffles. I thought the difference was because I cooked these waffles for less time than the other waffles, but that wasn't why since both I followed the waffle iron beep and the waffles browned the same amount as the other ones.

These were also sweeter than the Smitten Kitchen waffles, which fits both me and Kris just fine.

Kris and I dashed up to Mike and Kate's for breakfast this morning (where dash means "show up 40 minutes late"). Of course, I forgot my camera in the car when Kris and I went in. Kris hasn't been up to the house very much, so when he walked in, Liza was quite surprised. She looked up at him, put one hand on a hip, and announced, "I usually see just Kitt here."

Kris managed not to laugh.

Katie and Alex were up at the house, too. He and Maeryn played well together, though spending time with Liza means Maeryn behaves older than any other kid her age.

I managed to make pumpkin waffles again, this time with nutmeg instead of cinnamon, in deference to Mike. They were still tasty. I swear, that waffle iron (thanks Bharat and Jen!) is getting more use than any other appliance I own.

Except maybe the dish washer.

Pumpkin waffles

Megan and I were talking about websites last Saturday, and she showed me one of the sites she frequents, Smitten Kitchen. It's a food blog, which means, of course, it'll either have tasty recipes (and thus be worth visiting again) or sucky recipes (and thus we suspect Megan is crazy).

The first recipe I found on the site (you know, hard to miss, it was on the front page), was for pumpkin waffles. Now, pumpkins are ones of the glorious, glorious reasons fall is my favorite season, making this recipe completely inspiring. As in, don't wait until the weekened inspiring.

Kris has a meeting Thursday mornings, so he's up early. I don't have yoga in the morning since the schedule was changed at the beginning of the month, so hey, how about Thursday morning?

Megan and Mirabelle came over to help us eat the waffles. The recipe made 17 farm yard animal + barn waffles, of which Kris ate four, Megan ate two, Mirabelle at two and I managed all of one. I did eat the barn, though. Mirabelle had a chicken and a headless pig.

Aside from the wonderful reward of spending time with Kris and Megan and Mirabelle, making the waffles also caused the house to smell wonderful, as the pumpkin cooking spices filtered throughout the kitchen and living room. Pretty wonderful to come home to that smell.
